Cauliflower Clam Chowder

🛒 Ingredients You’ll Need

  • 4 strips thick-cut bacon, chopped 🥓
  • 1 large head of cauliflower, cut into small bite-sized florets 🥦
  • 1 medium yellow onion, finely diced 🧅
  • 2 ribs celery, finely diced 🥬
  • 2 cloves garlic, minced 🧄
  • 2 cans (6.5 oz each) minced clams (do not drain! We need the juice) 🦪
  • 1 cup chicken broth or vegetable broth 🥣
  • 1 cup heavy cream (or half-and-half) 🥛
  • ½ tsp dried thyme 🌿
  • 1 bay leaf 🍃
  • Salt and freshly cracked black pepper to taste 🧂
  • Celery leaves and extra cracked black pepper for garnish 🌿🌱
