🛒 Ingredients:
- 1 block (14 oz) Extra-Firm Tofu, pressed and cubed 🥮
- 2 cups Bok Choy, thoroughly washed and chopped 🥬
- 1.5 cups Broccoli florets 🥦
- 1 cup shelled Edamame 🫘
- 1 tbsp Olive oil or Sesame oil 🫒
- 2 cloves Garlic, minced 🧄
- 2 tbsp Soy sauce or Tamari 🤎
- 1 tbsp Toasted Almonds, sliced (for an extra calcium crunch!) 🥜
- 1 tsp Sesame seeds (optional) 🌱
👩🍳 Instructions:
- Sear the Tofu: Pat your cubed tofu dry with a clean kitchen towel. Heat half the oil in a large skillet or wok over medium-high heat. Sear the tofu cubes for 3–4 minutes per side until golden brown and crisp, then set aside.
- Sauté the Aromatics & Hearty Veggies: Add the remaining oil to the same skillet. Toss in the minced garlic, stirring constantly for 30 seconds until fragrant. Add the broccoli florets and a splash of water, covering for 2 minutes to let them steam.
- Toss in the Greens & Beans: Add the chopped bok choy and shelled edamame to the pan. Stir-fry for 3–4 minutes until the bok choy leaves wilt slightly but the stems maintain a satisfying crunch, mirroring the vibrant greens shown in
- Combine & Sauce: Toss the crispy tofu back into the skillet. Drizzle the soy sauce over everything and toss well to coat.
