  • The Science: When deli meat is exposed to oxygen, fluctuating temperatures, or light for too long, specific bacteria (like Lactobacillus or Leuconostoc) consume the compounds in the meat. This metabolic process produces hydrogen peroxide or hydrogen sulfide, which reacts with the meat’s natural pigments to form a dull green chemical compound called choleglobin. Alternatively, it could be the early stages of common mold growth.
  • The Verdict: This meat has spoiled. It contains high levels of bacteria or fungal spores that can lead to severe foodborne illness, including stomach cramps, vomiting, and diarrhea.

The 3-Step “Spoilage Test”

If you aren’t sure whether your meat is reflecting light or rotting, run it through this simple three-step checklist:

Step 1: The Texture Test

Pick up a slice of the meat. Fresh deli meat should feel moist but firm. If it feels distinctly slimy, sticky, or tacky to the touch, bacteria have multiplied across the surface. Throw it out immediately.

Step 2: The Smell Test

Bring the meat close to your nose. Fresh cured meat has a mild, savory, or smoky aroma. Spoiled deli meat will have a distinct sour, ammonia-like, sulfurous (like rotten eggs), or yeasty odor. If it smells off in the slightest, do not taste it.

Step 3: The Angle Test

Take the meat into a well-lit room and tilt it back and forth under the light. Does the green color vanish or shift when you change the angle of the slice? If the color disappears or moves, it’s just a harmless light reflection. If the green patch stays a solid, dull color no matter how you hold it, it is mold or bacterial spoilage.
