I accidentally made it too well. Now it’s the only thing I’m supposed to bring to the communal meal.

After about two and a half hours, briefly lift the lid and check if a piece of pasta from the center is cooked. If it’s still slightly firm to the bite, replace the lid and continue cooking, checking every 20 to 30 minutes, until the mostaccioli are cooked through and the cheese on top is completely melted and bubbling at the edges.

For a golden-brown, bakery-style crust, carefully remove the inner pot of your slow cooker (if oven-safe) after the pasta is cooked and place it under a preheated broiler. Broil for 3 to 5 minutes, watching carefully, until the cheese is golden brown and bubbling. Let the casserole rest on a heatproof surface for at least 10 minutes before serving to allow it to firm up slightly.

To serve, remove the baked mostaccioli directly from the braising pot with a large spoon or spatula, making sure to pierce the layers well so that each portion absorbs plenty of melted cheese and sauce. The cheese should stretch and become stringy when lifted, and the pasta should be moist but not soupy.

Variations & Tips

Since this recipe is intentionally reduced to just four ingredients, it’s easy to adapt once you’ve made the original version a few times. For an extra creamy consistency, stir 125 to 250 ml of ricotta, along with mozzarella and Parmesan, into the middle layer (this adds a fifth ingredient, but the dish then resembles a simple lasagna). If you prefer a bit more spice, you can use a spicy arrabbiata sauce or add a pinch of chili flakes to the finished marinara sauce before mixing it with the pasta.

To maintain the four-ingredient rule but achieve greater depth of flavor, use a particularly aromatic sauce—for example, with roasted garlic or basil—so you can achieve complexity without additional chopping. You can also experiment with the cheeses, although they still count as two ingredients: Use semi-skimmed mozzarella for the inside so it melts well, and a richer full-fat mozzarella for the top to achieve a beautiful browning. Or replace some of the Parmesan with Pecorino Romano for a saltier, more savory flavor.

If your slow cooker gets hot, check the pasta after about 2 hours; if it stays cool, cook for the full 3 1/2 hours, closing the lid as often as possible. Leftovers reheat well in the microwave with a little water or extra sauce and can be frozen in portions – ideal for spontaneous parties.
