Instructions:

  1. Preheat your oven: Preheat your oven to 375°F (190°C).
  2. Prep the pan: Line a large rimmed baking sheet with aluminum foil for easy cleanup. Place a wire baking rack on top of the foil and lightly spray it with non-stick cooking spray.
  3. Mix the coating: In a small bowl, whisk together the brown sugar, black pepper, and cayenne pepper.
  4. Coat the bacon: Lay the bacon strips across the wire rack in a single layer. Using a pastry brush, lightly dab the maple syrup over the bacon slices. Then, generously sprinkle the brown sugar mixture evenly over the top of the bacon. Pat it down slightly so it sticks.
  5. Bake: Bake for 20 to 25 minutes. Keep a close eye on it during the last 5 minutes! Because of the sugar, it can go from perfectly caramelized to burnt very quickly. You want the sugar to be melted and bubbly, and the bacon to be crisp.
  6. Cool: Remove from the oven and let the bacon sit on the rack for about 5-10 minutes. It will harden and “candy” as it cools.
  7. Serve: Carefully remove the bacon from the rack with tongs. Serve immediately, or store in an airtight container in the fridge (if it even lasts that long!).

A Quick Warning: Please eat this at the dining table. Take it from me—you do not want to wake up thinking a rogue piece of twisted bacon is attacking your back!
