The 3-Step Freshness Test: How to Tell if It’s Safe

You can’t rely on color alone to judge a steak. To know for sure if your dinner is safe, you need to use your other senses. Run through this quick checklist before you start heating up your pan:

1. The Sniff Test (The Most Reliable Indicator)

Fresh beef has a very mild, metallic, or slightly iron-like smell. If you open the package and are hit with a sharp, sour, ammonia-like, or sweet-spoiled odor, do not eat it. If it smells bad, cooking it will not make it safe.

2. The Touch Test (Check the Texture)

Pick up the steak and feel the surface. Fresh steak should feel moist, firm, and slightly cool. If the meat feels excessively slimy, sticky, or tacky to the touch, bacteria have already begun to multiply on the surface. Toss it out.

3. The Location of the Gray Color

Where is the gray color located?

  • Inside or bottom only: If the outside of the steak is still pinkish-red but the center or the spots where two steaks touched are gray, it is just an oxygen deficit. It is safe.
  • Entirely gray throughout: If the steak is completely gray on the outside, dull, and exhibits any of the signs above, it has likely been in the fridge too long and has started to spoil.
