Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack
👩🍳 Step-by-Step Instructions
Step 1: Prep the Veggies & Pre-Cook the Potatoes 🥔⏰
- Cut four large sheets of heavy-duty aluminum foil (about 12×12 inches each) and lay them out on your counter.
- The Chef’s Shortcut: Because potatoes take much longer to cook than shrimp, place your quartered or sliced potatoes in a microwave-safe bowl with a splash of water. Microwave on high for 3 to 4 minutes just to par-cook them and jumpstart the process.
Step 2: Toss Everything Together 🥣✨
- In a large mixing bowl, combine your 1 lb of peeled shrimp, sliced smoked sausage, par-cooked potatoes, and corn.
- Pour the 4 tbsp of melted butter and 2 tbsp of olive oil directly over the ingredients.
- Sprinkle in the 1.5 tbsp of Cajun/Old Bay seasoning and minced garlic. Toss thoroughly with large spoons until every single piece is heavily coated in that gorgeous, seasoned butter glaze.
Step 3: Assemble the Foil Packs 🏗️📐
- Divide the mixture evenly among the 4 sheets of heavy-duty aluminum foil, placing the ingredients right in the center.
- Bring the top and bottom edges of the foil together over the food, fold them down tightly to create a seal, then fold in the sides. Leave a little pocket of air inside the pack so the steam can circulate and cook everything evenly!
Step 4: Grill or Bake to Perfection! 🥖🔥
Choose your cooking adventure:
- Option A: On the Grill (Highly Recommended!) Preheat your grill to medium-high heat (around 400°F / 200°C). Place the foil packets directly onto the grill grates. Close the lid and cook for 15 to 20 minutes, flipping once halfway through, until the shrimp is pink and cooked through.
- Option B: In the Oven Preheat your oven to 400°F (200°C). Place the foil packs onto a large baking sheet. Bake for 20 to 25 minutes until the potatoes are completely fork-tender.
