Soure Cream pound cake

👩‍🍳 Step-by-Step Instructions

Step 1: Prep Your Pan & Oven 📐🔥

  1. Preheat your oven to 325°F (165°C). (Pound cakes love a slow, steady bake!)
  2. Generously grease a 10-inch or 12-cup Bundt pan or tube pan with shortening or butter, making sure to get into every single ridge. Dust the inside evenly with flour, tapping out any excess.

Step 2: Sift the Dry Ingredients 🌾🥣

  1. In a medium bowl, whisk together the 3 cups of all-purpose flour, ¼ tsp of baking soda, and ¼ tsp of salt. Set aside.

Step 3: Cream the Butter & Sugar 🧈✨

  1. In a large mixing bowl (or stand mixer equipped with a paddle attachment), combine the 1 cup of softened butter and ½ cup of shortening. Beat on medium-high speed for about 2 minutes until smooth.
  2. Gradually add the 3 cups of granulated sugar, beating continuously. Crank the mixer up to medium-high for another 5 full minutes until the mixture is incredibly light, fluffy, and looks like white clouds. Do not rush this step—this incorporates the air needed to make the cake rise!

Step 4: Add the Mix-Ins 🥚🍦

  1. Turn the mixer down to low. Add the 6 eggs one at a time, beating just until the yellow yolk disappears into the batter before adding the next.
  2. Stir in the 1 tsp of vanilla extract and ½ tsp of almond extract.

Step 5: Alternate Flour & Sour Cream 🥛🔄

  1. With the mixer on its lowest setting, add one-third of your flour mixture, followed by half of the sour cream.
  2. Repeat with another third of the flour, the remaining half of the sour cream, and finish with the last of the flour. Mix just until combined—over-mixing at this stage will make the pound cake tough!

Step 6: Bake to Golden Perfection! ⏰🛎️

  1. Spoon the thick, luxurious batter into your prepared Bundt pan, smoothing out the top surface with a spatula. Tap the pan firmly on the counter a few times to release any trapped air bubbles.
  2. Bake at 325°F for 1 hour 15 minutes to 1 hour 30 minutes. The cake is done when a long wooden skewer inserted deep into the center comes out clean or with just a few moist crumbs attached.
