Just like a classic dress, this recipe is incredibly versatile, beautifully presented, and requires surprisingly little effort. These individual cheesecake cups look like they took hours to make, but they come together in minutes without ever turning on the oven!

Prep time: 15 minutes

Chill time: 2 hours

Servings: 6

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar

For the Cheesecake Filling:

  • 1 (8 oz) block cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, very cold

For the Topping:

  • 1 1/2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon honey or agave syrup
  • A squeeze of fresh lemon juice

Instructions:

  1. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Divide this mixture evenly among 6 elegant serving glasses or mason jars. Press down lightly to form a solid base.
  2. Whip the Cream: In a separate, chilled bowl, use a hand mixer to beat the cold heavy whipping cream until stiff peaks form (about 3-4 minutes). Set aside.
  3. Beat the Cream Cheese: In another large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is completely smooth and creamy, with no lumps remaining.
  4. Fold it Together: Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Fold slowly and carefully to keep the filling light and airy!
  5. Layer the Cups: Spoon or pipe the rich cheesecake filling directly over the graham cracker crusts in your serving glasses.
  6. Macerate the Berries: Toss your fresh mixed berries with the honey and a splash of lemon juice. Let them sit for 5 minutes so the natural juices release to create a sweet, glossy syrup.
  7. Chill and Serve: Top each cheesecake cup with a generous spoonful of the glossy berries. Refrigerate for at least 2 hours to let the filling set before serving to your impressed guests!
