3 Apples, 3 Eggs, and a Glass of Milk: This Cloud-Like German Apple Cake Melts in Your Mouth!
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Apples | 3 medium | Honeycrisp, Gala, or Granny Smith work beautifully. |
| Eggs | 3 large | Room temperature helps the batter fluff up. |
| Milk | 1 glass (approx. 1 cup) | Whole milk gives the richest flavor. |
| Granulated Sugar | 3/4 cup | Adjust slightly depending on how sweet your apples are. |
| All-Purpose Flour | 2 cups | Sifted for the fluffiest texture. |
| Butter | 1/2 cup (1 stick) | Melted and cooled slightly. |
| Baking Powder | 1 tablespoon | Gives the cake its beautiful lift around the fruit. |
| Vanilla Extract | 1 teaspoon | For that signature bakery aroma. |
| Powdered Sugar | For dusting | The essential finishing touch! |
Step-by-Step Instructions
Step 1: Prep the Fruit and the Pan
Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving a little overhang on the sides so you can easily lift the finished cake out later.
Peel and core your three apples. Slice them into thin wedges or small, uniform cubes (cubes make it incredibly easy to distribute the fruit evenly across the pan).
Step 2: Whip Up the Fluffy Base
In your large mixing bowl, crack the 3 eggs and add the granulated sugar. Using your hand mixer, beat them vigorously for about 2 to 3 minutes until the mixture becomes pale yellow, thick, and frothy. This traps air in the eggs, which is the secret to that “melt-in-your-mouth” texture.
Step 3: Mix the Liquid and Dry Ingredients
Slowly pour in the glass of milk, melted butter, and vanilla extract while mixing on low speed.
In a separate small bowl, toss your baking powder with the sifted flour. Gradually add the flour mixture into your wet ingredients, folding gently with a spatula just until the flour disappears. Be careful not to overmix, or the cake will lose its cloud-like softness!
Step 4: Assemble and Pour
Scatter your prepared apple pieces evenly across the bottom of your parchment-lined pan. Carefully pour the smooth, velvety batter right over the top of the apples (just like in the top half of the photo). Use a spatula to smooth out the surface so the batter fills all the nooks and crannies between the fruit.
Step 5: Bake to a Golden Glow
Pop the pan into the middle rack of your preheated oven and bake for 35 to 40 minutes. You will know it’s ready when the top turns a gorgeous, uniform golden brown and a toothpick inserted into the center of the cake comes out clean.
