Step 1: The Foolproof Hard-Boil 🥚🔥

  1. Place your eggs in a single layer at the bottom of a large saucepan. Cover them with cold water so there is at least an inch of water above the eggs.
  2. Bring the water to a rolling boil over high heat.
  3. As soon as the water boils, turn off the heat, cover the pan with a tight-fitting lid, and let it sit undisturbed for exactly 12 minutes.

Step 2: The Ice Bath Shock ❄️🛑

  1. While the eggs sit, fill a large bowl with cold water and ice cubes.
  2. Once the 12-minute timer goes off, immediately transfer the eggs from the hot water into the ice bath using a slotted spoon.
  3. Let them chill for at least 10 minutes. (This stops the cooking process instantly and prevents that unappealing gray-green ring around the yolk!)

  1. Gently tap the eggs on your counter to crack the shells all over, then roll them lightly to loosen the membrane. Peel under cool running water.
