Step 1: Prep and Preheat 🌡️📐
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×5-inch loaf pan with non-stick cooking spray, or line a rimmed baking sheet with aluminum foil if you prefer shaping your meatloaf freeform style!
Step 2: Whisk the Liquid Aromatics 🥚🥛
- In a large mixing bowl, combine the 2 beaten eggs, ½ cup of milk, 2 tbsp of Worcestershire sauce, chopped onion, minced garlic, parsley, salt, and black pepper.
- Whisk these ingredients together thoroughly before adding the meat. (This ensures all the seasonings are evenly distributed without overworking the beef later!)
Step 3: Mix and Shape Gently 🥩🌀
- Add the 2 lbs of ground beef and 1 cup of breadcrumbs directly into the bowl with the wet mixture.
- Using clean hands, gently mix the ingredients together just until everything is combined. Do not overmix! Overworking the meat will make your meatloaf dense and tough.
- Transfer the mixture into your loaf pan (or shape it into a neat log on your lined baking sheet), pressing down gently so it holds its shape.
Step 4: Mix the Sweet & Tangy Glaze 🍅✨
- In a small bowl, whisk together the ¾ cup of ketchup, 2 tbsp of brown sugar, 1 tbsp of yellow mustard, and 1 tsp of apple cider vinegar until perfectly smooth.
- Spread half of this delicious glaze evenly over the top of the raw meatloaf. Reserve the remaining half for later!
