Mediterranean Lentil & Roasted Vegetable Salad

🛒 Ingredients:

The Salad Base:

  • 1 cup Brown or Green Lentils (rinsed thoroughly) 🫘
  • 1 medium Zucchini, sliced into thick half-moons 🥒
  • 2 large Carrots, peeled and chopped into thick rounds 🥕
  • 1 block (7 oz / 200g) Halloumi Cheese (or Feta), cut into thick cubes or slabs 🧀
  • 1/2 cup fresh Italian Flat-Leaf Parsley, finely chopped 🌿
  • 2 tbsp Olive oil (for roasting) 🫒
  • Salt and black pepper to taste 🧂

The Zesty Herb Dressing:

  • 3 tbsp Extra virgin olive oil 🫒
  • 2 tbsp Fresh lemon juice 🍋
  • 1 clove Garlic, finely minced 🧄
  • 1 tsp Dried oregano or Mediterranean seasoning 🌿
  • A pinch of red pepper flakes (optional) 🌶️
