Mediterranean Lentil & Roasted Vegetable Salad
🛒 Ingredients:
The Salad Base:
- 1 cup Brown or Green Lentils (rinsed thoroughly) 🫘
- 1 medium Zucchini, sliced into thick half-moons 🥒
- 2 large Carrots, peeled and chopped into thick rounds 🥕
- 1 block (7 oz / 200g) Halloumi Cheese (or Feta), cut into thick cubes or slabs 🧀
- 1/2 cup fresh Italian Flat-Leaf Parsley, finely chopped 🌿
- 2 tbsp Olive oil (for roasting) 🫒
- Salt and black pepper to taste 🧂
The Zesty Herb Dressing:
- 3 tbsp Extra virgin olive oil 🫒
- 2 tbsp Fresh lemon juice 🍋
- 1 clove Garlic, finely minced 🧄
- 1 tsp Dried oregano or Mediterranean seasoning 🌿
- A pinch of red pepper flakes (optional) 🌶️
