Southern Squash Casserole

👩‍🍳 Step-by-Step Instructions

Step 1: Prep and Preheat 📐🔥

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease an 8×11-inch or 9×13-inch baking dish with non-stick cooking spray or a pat of butter.

Step 2: Sauté the Veggies 🧅🍳

  1. Melt the 2 tbsp of butter in a large skillet over medium heat.
  2. Add the sliced yellow squash and chopped onion. Sauté for about 8 to 10 minutes, stirring occasionally, until the squash is just tender and the onions are translucent.
  3. The Essential Step: Remove the skillet from the heat and transfer the squash and onions into a colander. Let them drain for a few minutes, gently pressing down with a spoon to remove excess moisture. (Don’t skip this, or your casserole will turn out watery!)

Step 3: Mix the Creamy Filling 🧀🥣

  1. In a large mixing bowl, whisk together the 2 beaten eggs, ½ cup of sour cream, and ½ cup of mayonnaise.
  2. Stir in the 1 cup of shredded cheddar cheese, garlic powder, salt, and black pepper until completely combined.
  3. Gently fold the drained squash and onions into the creamy cheese mixture until everything is beautifully coated. Pour the mixture evenly into your prepared baking dish.
