Step 1: Prep and Preheat 📐🔥
- Preheat your oven to 350°F (175°C).
- Lightly grease an 8×11-inch or 9×13-inch baking dish with non-stick cooking spray or a pat of butter.
Step 2: Sauté the Veggies 🧅🍳
- Melt the 2 tbsp of butter in a large skillet over medium heat.
- Add the sliced yellow squash and chopped onion. Sauté for about 8 to 10 minutes, stirring occasionally, until the squash is just tender and the onions are translucent.
- The Essential Step: Remove the skillet from the heat and transfer the squash and onions into a colander. Let them drain for a few minutes, gently pressing down with a spoon to remove excess moisture. (Don’t skip this, or your casserole will turn out watery!)
