Step 1: Brown the Beef & Build the Sauce 🥩🔥
- Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with non-stick cooking spray.
- In a large skillet over medium-high heat, combine the ground beef and diced onion. Cook until the meat is completely browned and no longer pink, breaking it up with a wooden spoon as it cooks. Drain any excess grease.
- Turn the heat down to medium-low. Stir in the taco seasoning packet, ⅓ cup of water, diced green chilies, and drained beans. Let it simmer for 3 to 4 minutes until thickened.
- Stir in the can of soup and 1 cup of the shredded cheese until everything is beautifully combined, warm, and creamy.
Step 2: Assemble the Casserole 🏗️🧀
- Take about half of your bag of Fritos corn chips and lightly crush them. Spread them evenly along the bottom of your prepared 9×13-inch baking dish to form your crunchy base layer.
- Carefully spoon the warm, creamy taco meat mixture directly over the chip layer, spreading it out into a flat, even layer with a spatula.
- Sprinkle the remaining 1.5 cups of shredded cheese generously over the top of the beef.
Step 3: Bake until Bubbly! ⏰🔥
- Place the casserole in the oven, uncovered, and bake for 15 to 20 minutes. You want the cheese to be completely melted, golden, and bubbling at the edges.
- Remove the dish from the oven. Immediately sprinkle the remaining uncrushed Fritos corn chips over the hot melted cheese so they stick to the top!
