Walking Taco Casserole

👩‍🍳 Step-by-Step Instructions

Step 1: Brown the Beef & Build the Sauce 🥩🔥

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large skillet over medium-high heat, combine the ground beef and diced onion. Cook until the meat is completely browned and no longer pink, breaking it up with a wooden spoon as it cooks. Drain any excess grease.
  3. Turn the heat down to medium-low. Stir in the taco seasoning packet, ⅓ cup of water, diced green chilies, and drained beans. Let it simmer for 3 to 4 minutes until thickened.
  4. Stir in the can of soup and 1 cup of the shredded cheese until everything is beautifully combined, warm, and creamy.

Step 2: Assemble the Casserole 🏗️🧀

  1. Take about half of your bag of Fritos corn chips and lightly crush them. Spread them evenly along the bottom of your prepared 9×13-inch baking dish to form your crunchy base layer.
  2. Carefully spoon the warm, creamy taco meat mixture directly over the chip layer, spreading it out into a flat, even layer with a spatula.
  3. Sprinkle the remaining 1.5 cups of shredded cheese generously over the top of the beef.

Step 3: Bake until Bubbly! ⏰🔥

  1. Place the casserole in the oven, uncovered, and bake for 15 to 20 minutes. You want the cheese to be completely melted, golden, and bubbling at the edges.
  2. Remove the dish from the oven. Immediately sprinkle the remaining uncrushed Fritos corn chips over the hot melted cheese so they stick to the top!
