Step 1: Cook the Pasta 🍝💧

  1. Bring a large pot of heavily salted water to a rolling boil.
  2. Add your 8 oz of pasta and cook according to the package instructions until it is al dente (usually 8 to 10 minutes).
  3. The Chef’s Secret: Before you drain the pasta, scoop out and save ½ cup of the starchy pasta water. Set it aside—we’ll use this to make our sauce extra velvety later! Drain the pasta and set aside.

Step 2: Season the Shrimp 🍤🎨

  1. Pat your shrimp completely dry with a paper towel. (Dry shrimp sear beautifully, whereas wet shrimp will just steam in the pan!)
  2. Toss the shrimp in a medium bowl with 1 tablespoon of Cajun seasoning, making sure every single shrimp is beautifully coated in those red Louisiana spices.

Step 3: Sear the Shrimp 🍳🔥

  1. Heat a large skillet over medium-high heat. Add the 2 tbsp of olive oil and 2 tbsp of butter.
  2. Once the butter is melted and bubbling, add the seasoned shrimp in a single layer.
  3. Cook for 1 to 2 minutes per side just until they turn pink and opaque. Do not overcook them! Use a slotted spoon to transfer the shrimp to a clean plate, leaving all the gorgeous red seasoned oil in the pan.

Step 4: Build the Zesty Wine Sauce 🥂🧄

  1. Turn the skillet heat down to medium. Add the minced garlic and optional red pepper flakes to the seasoned oil. Sauté for about 30 to 45 seconds until incredibly fragrant—be careful not to let the garlic burn!
  2. Pour in the ½ cup of white wine (or chicken broth) and the lemon juice. Use a wooden spoon to scrape up all those flavorful, caramelized bits stuck to the bottom of the skillet.
  3. Bring the liquid to a simmer and let it reduce by half, which should take about 3 to 4 minutes.

Step 5: Emulsify and Toss! 🔄✨

  1. Stir in the remaining 2 tablespoons of cold butter and a splash of your reserved pasta water. Whisk continuously until the butter melts and creates a glossy, slightly thickened sauce.
  2. Toss the cooked pasta, the seared shrimp, and any juices from the plate right back into the skillet.
  3. Toss everything together for 1 minute over low heat until the pasta is completely coated and glistening in the spicy, buttery sauce.
