Loaded Steak Quesadillas
👩🍳 Step-by-Step Instructions
Step 1: Sear the Steak to Perfection 🥩🔥
- Pat your sliced steak dry with paper towels and toss it with the taco seasoning, a pinch of salt, and black pepper.
- Heat a large skillet over high heat and add ½ tablespoon of olive oil.
- Once the pan is smoking hot, add the steak slices in a single layer. Sear quickly for 2 to 3 minutes per side until a beautiful brown crust forms. Remove the steak from the skillet and set it aside on a plate to rest.
Step 2: Sauté the Veggies 🫑🧅
- Turn the skillet heat down to medium and add the remaining ½ tablespoon of olive oil.
- Toss in the sliced bell pepper and onion. Sauté for 4 to 5 minutes until they are soft, slightly caramelized, and tender. Remove them from the heat.
Step 3: Build the Quesadillas 🏗️🧀
- Wipe your skillet clean and melt ½ tablespoon of butter over medium heat.
- Place one flour tortilla flat in the skillet.
- Sprinkle a generous handful of shredded cheese over the entire surface of the tortilla.
- On just one half of the tortilla, layer a quarter of your seared steak and a spoonful of the sautéed peppers and onions.
- Once the cheese starts melting, fold the empty half of the tortilla over the filling to create a half-moon shape.
Step 4: Get That Golden, Crispy Crunch! 🥞📐
- Cook the folded quesadilla for 2 to 3 minutes until the bottom is a deep golden-brown and crispy.
- Carefully flip it over and cook the other side for another 2 minutes until all the cheese inside is completely melted, gooey, and acting like glue to hold the fillings together.
- Repeat the process for the remaining 3 quesadillas, adding a little butter to the pan each time.
