Step 1: Roast Your Sweet Potatoes 🍠🔥

  1. Preheat your oven to 400°F (200°C).
  2. Scrub your sweet potatoes clean and prick them all over with a fork. Place them on a baking sheet lined with foil.
  3. Bake for 45 to 50 minutes, or until they are completely fork-tender and juices begin to caramelize.
  4. Remove them from the oven, let them cool enough to handle, then slice them open and scoop out the bright orange flesh into a bowl. Discard the skins.

💡 Lower the oven temperature to 350°F (175°C) for baking the pie!

Step 2: Mash into Smooth Perfection 🌀🥣

  1. Use a potato masher, hand mixer, or food processor to blend the warm sweet potato flesh until it is completely smooth and free of major strings/fibers. You will need exactly 2 cups of mashed sweet potato for this recipe.
  2. While the potatoes are still warm, add the ½ cup of softened butter and mix thoroughly until the butter is completely melted and integrated.

Step 3: Mix the Spiced Custard 🥚🍂

  1. Add both the granulated sugar and brown sugar, mixing well.
  2. Pour in the whole milk (or heavy cream), 2 eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt.

  3. Bake at 350°F (175°C) for 50 to 55 minutes. The pie is done when the edges are set, but the absolute center has just a tiny, slight jiggle.
